Lemon Cheesecake Squares

Hello Everyone, I made Lemon Cheesecake squares for our Diwali Celebrations. I got this recipe in the cook book 'Meals made easy', the one  I received as a gift. They make a refreshing dessert to a dinner and are delicious for afternoon tea. It is an easy recipe to follow and quick to make. Ingredients: 60g butter 1 1/2 cups Granita Biscuit crumbs (You get them at Coles, Put them in a plastic bag and crush using a rolling pin ) 1 1/4 cups White sugar 1 Packet (100g) Lemon flavored Jelly 250g Cream Cheese, softened 1Tsp Lemon Essence 440g Sweetened condensed milk chilled Thin lemon rind strips, to garnish Steps: 1. Lightly grease the bottom and sides of a 20cm square baking pan. 2. Melt the butter in a small saucepan over low heat. In a large bowl, mix the butter with the biscuit crumbs and 1/4 cup sugar. Press the mixture into the prepared baking pan and bake for 10 minutes. Allow to cool. 3. Place jelly in a small bowl; add 3/4 cup boiling water (as per packet instructions). S

Hello Everyone! Finally I have managed to reach a computer and get  some 'me' time to  write this post. It's been really busy year. Since my last post, we had a new addition to our family - a beautiful baby girl. And so that's what has kept me busy since then. That doesn't mean I have not been cooking, it just has been not possible to update my posts. The year has been full of new cooking experiments. The pictures speak for themselves. Would soon share some more recipes. Meanwhile I recently received a pleasant gift from Readers Digest. It is really handy as I have just completed filing all my recipes into it. I am dedicating myself to cooking all recipes from the book at least once. Lets see how that goes. Will keep you posted. Have a good night!
